A Saison finished with over 40% (by fermentables) Petite Sirah grape must. This hybrid started life as a dainty little Grisette fermented with Brett M to provide mild barnyeard funk along with musty apple and pear skins. The finished beer drinks somewhere between wine and beer, carbonation and bitterness taking it more into the latter category. Cherry, blueberry and currant party it up over a fairly leathery base, finishing very dry with a lightly floral noble hop character.
