This large Saison was fermented with Brett M, spending three months in steel and another four in the cellar. The extended conditioning has brought forward Brett M's orchard fruit and funk, lending peach throughout, as well as some pear skin, mango, melon and pineapple. Brewed with Ontario malt and hopped with Saphir and a bit of Simcoe, lending an herbal character with just a touch of dankness on the finish.
