Approaching Transition - WBA Dark Super Saison - 9.4% ABV

Brewed in December 2019 (far simpler times). A strong, dark Saison base was fermented with Sacch Trois and Brett Lambicus in steel for two months and sent to a wine barrel that held previously an imperial porter of some regard.

Fast forward thirteen months and now we have a gigantic dark Saison featuring deep red and raisinated fruits, some nuttiness and a touch of balsamic type acid. Mild leather and oak tannins, cinnamon and molasses come along with blackberry and strawberry. Bottled at a slightly lower carb, this shares some territory with oloroso sherry.
